Conclusions EPR spectroscopy is the useful technique to examine the magnitude and kinetics of interactions of antioxidants with free radicals for medical purposes. The quenching the EPR spectra of DPPH reflects neutralization of free radicals by antioxidants. The antioxidant properties of plant extracts from the single and complex raw materials may be tested. The effect of environmental conditions on antioxidant interactions of plant extracts is possible to test by the EPR spectroscopy.
