9 EPR spectroscopy in the study of plant antioxidants - theoreti- cal foundations and medical applications ABSTRACT: The review paper concerns the application of the phenomenon of electron para- magnetic resonance in medicine. It presents the structure and principle of operation of the EPR spectrometer and the importance of spectroscopic parameters in the analysis of free radicals and antioxidants for medical purposes. Particular attention was paid to an X-band (9.3 GHz) EPR spectroscopy. The role of model DPPH free radicals in the analysis of plant antioxidants used in the prevention and treatment of selected diseases is discussed. Examples of changes in the EPR spectra of DPPH caused by interaction with plant extracts are given. Extracts obtained from individual plant raw materials and their mixtures are included. The influence of environmental conditions in the area from which the plant material was obtained on the antioxidant properties of the extracts was shown. The principles of examining the magnitude and kinetics of interaction of anti- oxidants with free radicals using EPR method are presented.
